Bhajee is a style of cooking vegetables where the final Tarka or Chamack (a fierce searing with charfried butter and seasonings gives it its characteristic flabvour and spicing). These dishes are fairly medium with simply the natural moisture and juices of the vegetables, and the butter used for cooking.
